  • 4 pieces bone-in pork chops (1-inch thick)

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 8 ounces cremini mushrooms, finely chopped
  • 0.75 cups breadcrumbs (preferably panko)
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 tablespoon fresh parsley, chopped
  • 0.25 cups chicken broth
  • 2 tablespoons grated Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut a pocket into the side of each pork chop, being careful not to slice all the way through.

Season both sides and the insides of the pork chops with salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the butter and let it melt.
