Ingredients

  • 4 pieces Pork chops (bone-in, thick cut)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 large Apple (preferably Granny Smith, peeled and diced)
  • 0.5 cup Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Sage (chopped)
  • 0.5 cup Breadcrumbs (preferably panko)
  • 0.25 cup Chicken broth
  • 0.25 cup Parmesan cheese (grated)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut a horizontal pocket into the thickest part of each pork chop, being careful not to cut all the way through. Season the pork chops generously with salt and pepper on both sides.

Step 3

In a large skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium heat. Add the diced apple and onion, and cook until softened, about 5–6 minutes.

Step 4

Stir in the minced garlic, thyme, and sage. Cook for another 1–2 minutes, until fragrant.

Step 5

Add the breadcrumbs to the skillet, and stir to combine with the apple and onion mixture. Pour in the chicken broth and cook for another 1–2 minutes, until the mixture is moistened but not soggy. Remove from heat and stir in the grated Parmesan cheese. Taste and adjust seasoning, if needed.

Step 6

Stuff each pork chop with the prepared apple stuffing, securing the opening with toothpicks if necessary.

Step 7

Wipe the skillet clean and add the remaining 2 tablespoons of butter. Heat over medium-high heat. Sear the stuffed pork chops for 2–3 minutes per side, until golden brown.

Step 8

Transfer the pork chops to a baking dish and cover with foil. Bake in the preheated oven for 25–30 minutes, or until the internal temperature reaches 145°F (63°C).

Step 9

Let the pork chops rest for 5 minutes before serving. Remove toothpicks, if used, and serve warm.
