Season both sides of the pork chops with kosher salt and black pepper.
In a large skillet over medium heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter until the butter melts and begins to foam.
Add the pork chops to the skillet and sear for 3-4 minutes per side, or until golden brown. Remove the pork chops from the skillet and set them aside. They do not need to be fully cooked at this stage.
In the same skillet, add the remaining olive oil and butter. Add the sliced apples and onion, and cook for 5-7 minutes, stirring occasionally, until softened.
Sprinkle the brown sugar and ground cinnamon over the apples and onions. Stir to combine and cook for an additional 2 minutes.
Add the drained sauerkraut, dry white wine (or chicken broth), and caraway seeds (if using) to the skillet. Stir to incorporate and place the pork chops back into the skillet on top of the mixture.
Reduce the heat to medium-low, cover the skillet, and let the pork chops simmer for 10-12 minutes, or until they reach an internal temperature of 145°F (63°C).
Remove the pork chops to a serving platter and let them rest for 5 minutes.
Stir the sautéed apple and sauerkraut mixture to combine the flavors, then spoon it over the pork chops on the platter.
