  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cups Rhubarb
  • 0.25 cup Brown sugar
  • 0.5 cup Diced onion
  • 1 cup Dried breadcrumbs
  • 0.25 cup Chicken stock
  • 2 tablespoons Chopped fresh parsley
  • 0.25 teaspoon Ground cinnamon

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the pork chops on both sides with salt and pepper.

Step 3

In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 2-3 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the diced onion and cook for 2-3 minutes until softened.
