Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 large, thinly sliced yellow onions
  • 6 leaves fresh sage leaves
  • 1 tablespoon apple cider vinegar
  • 1 cup unsweetened applesauce
  • 0.25 teaspoon ground cinnamon

Directions

Step 1

Season both sides of the pork chops with salt and black pepper. Let them sit at room temperature for 10 minutes.

Step 2

Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Once the butter has melted and is sizzling, sear the pork chops for 4-5 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce heat to medium. In the same skillet, add the remaining butter. Once melted, add the thinly sliced onions and a pinch of salt. Sauté for 10-12 minutes, stirring occasionally, until the onions are caramelized and soft.

Step 4

Add the fresh sage leaves to the skillet and cook for another 1-2 minutes until fragrant.

Step 5

Deglaze the skillet by adding the apple cider vinegar, scraping up any browned bits from the bottom of the pan with a wooden spoon. Cook for 1-2 minutes to reduce the vinegar slightly.

Step 6

Return the pork chops to the skillet, nestling them into the onion and sage mixture. Cover the skillet and cook over low heat for 8-10 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 7

While the pork chops are cooking, warm the applesauce in a small saucepan over low heat. Stir in the ground cinnamon and mix well.

Step 8

Serve the pork chops topped with the caramelized onions and sage, alongside a generous dollop of warm cinnamon applesauce. Enjoy!
