Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons yellow mustard or prepared horseradish
  • 1 tablespoon honey
  • 2 cloves garlic
  • 1 cup chicken broth or stock
  • 2 tablespoons heavy cream
  • 2 tablespoons fresh parsley

Directions

Step 1

Season the pork chops on both sides with salt and black pepper. Allow them to rest at room temperature for 10 minutes.

Step 2

Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and swirl to coat the pan.

Step 3

Sear the pork chops for 3-4 minutes per side or until golden brown. Remove them from the skillet and set them aside on a plate.

Step 4

Lower the heat to medium and add 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for 30 seconds until fragrant.

Step 5

Mix the mustard or prepared horseradish with honey in a small bowl. Add the mixture to the skillet and stir until combined.

Step 6

Pour in the chicken broth or stock, scraping up any browned bits from the bottom of the pan. Let the mixture reduce by half, about 4-5 minutes.

Step 7

Stir in the heavy cream and simmer for another 2-3 minutes until slightly thickened.

Step 8

Return the pork chops to the skillet, spooning the sauce over them. Cook for an additional 5-7 minutes or until the pork chops reach an internal temperature of 145°F (63°C).

Step 9

Garnish with chopped fresh parsley and serve immediately with the pan sauce drizzled over the pork chops.
