Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 medium Yellow onions, thinly sliced
  • 1 teaspoon Brown sugar
  • 1 tablespoon Balsamic vinegar
  • 4 ounces Goat cheese, crumbled
  • 1 teaspoon Fresh thyme (optional, for garnish)

Directions

Step 1

Season both sides of the pork chops with salt and black pepper. Set aside while you prepare the onions.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Add the thinly sliced onions to the skillet, stirring to coat them in the oil and butter mixture.

Step 4

Cook the onions for 20-25 minutes, stirring occasionally, until they are soft and golden brown. Add the brown sugar and balsamic vinegar, and cook for an additional 2-3 minutes until well combined and caramelized. Remove the onions from the skillet and set aside.

Step 5

In the same skillet, heat the remaining 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Add the pork chops to the skillet and sear for 3-4 minutes on each side, until golden brown on the outside.

Reduce the heat to medium and continue cooking the pork chops for another 5-7 minutes per side, or until they reach an internal temperature of 145°F (63°C).

Divide the goat cheese evenly over the top of the pork chops during the last 2 minutes of cooking, allowing the cheese to soften and melt slightly.

Remove the pork chops from the skillet and transfer them to serving plates. Top each chop with a generous spoonful of the caramelized onions.
