Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 2 cups fresh tomatoes (diced)
  • 1 medium yellow onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 1 cup feta cheese (crumbled)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, optional garnish)

Directions

Step 1

Pat the pork chops dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side, or until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and reduce the heat to medium. Add the sliced onion and cook, stirring occasionally, for 5-7 minutes, or until softened and caramelized.

Step 4

Stir in the minced garlic and cook for another 1-2 minutes, or until fragrant.

Step 5

Add the diced tomatoes and dried oregano to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices.

Step 6

Return the seared pork chops to the skillet, nestling them into the tomato mixture. Cover the skillet and cook for 10-12 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

Step 7

Sprinkle the crumbled feta cheese over the pork chops and tomato mixture. Cover again and cook for an additional 2 minutes to allow the cheese to slightly melt.

Step 8

Remove the skillet from heat. Garnish with freshly chopped parsley, if desired, and serve immediately.
