Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, finely minced
  • 2 Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.75 cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Fresh thyme leaves
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the pork chops dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes per side until golden brown and fully cooked (internal temperature of 145°F/63°C). Remove the pork chops from the skillet and set aside on a plate, tenting them with foil to keep warm.

Step 3

Reduce the heat to medium and add butter to the skillet. Once melted, add the minced shallots and cook for 1-2 minutes until softened. Add the garlic and cook for an additional 30 seconds until fragrant.

Step 4

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Simmer for 3-4 minutes to reduce the liquid slightly.

Step 5

Stir in the heavy cream, Dijon mustard, and thyme leaves. Whisk together until smooth, and let the sauce simmer on low heat for 2-3 minutes until slightly thickened.

Step 6

Return the pork chops to the skillet, spoon the sauce over them, and let them warm for about 2 minutes.

Step 7

Garnish with chopped fresh parsley and serve immediately with your favorite sides, such as mashed potatoes or steamed vegetables.
