Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 cup Breadcrumbs (panko recommended)
  • 0.75 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Dijon mustard

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Season both sides of the pork chops with salt, black pepper, and garlic powder.

Step 3

In a large oven-safe skillet, heat olive oil over medium-high heat. Once the oil is hot, sear each pork chop for 2-3 minutes per side until golden brown. Remove from heat and set aside.

Step 4

In a small bowl, mix the breadcrumbs, grated Parmesan cheese, and chopped parsley together.

Step 5

Melt the butter over low heat and mix it into the breadcrumb mixture to make it slightly moist.

Step 6

Brush the top of each pork chop with a small amount of Dijon mustard, then press a generous layer of the breadcrumb mixture onto the mustard-coated surface of the chops.

Step 7

Transfer the skillet with the crusted pork chops to the preheated oven. Bake for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 8

Turn the oven to broil for the final 2-3 minutes of cooking to achieve a golden, crunchy topping, but keep an eye on it to prevent burning.

Step 9

Remove from the oven and let the pork chops rest for 5 minutes before serving.

Step 10

Serve warm and garnish with additional parsley if desired.
