Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 small Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 2 cups Fresh or frozen cherries (pitted)
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 0.5 cup Chicken stock
  • 1 teaspoon Cornstarch
  • 1 tablespoon Water
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Pat the pork chops dry with paper towels, then season generously on both sides with salt and ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the pork chops in the skillet and sear them for 3-4 minutes per side, or until golden brown and just cooked through. Remove the pork chops from the skillet and set aside on a plate, tenting them with foil to keep warm.

Step 3

In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the chopped shallots and cook for 2-3 minutes until softened, then add the garlic and cook for another 30 seconds until fragrant.
