  • 4 bone-in pork chops
  • 2 teaspoons salt
  • 1 teaspoon black pepper

  • 2 tablespoons unsalted butter
  • 2 shallots, finely minced
  • 2 garlic cloves, minced
  • 1 cup chicken stock
  • 1 cup dry red wine
  • 1 cup cherry preserves
  • 2 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Season both sides of the pork chops with salt and black pepper. Let them rest for 5 minutes to absorb the seasoning.

Step 2

In a large skillet, heat olive oil over medium-high heat. Once the oil is shimmering, add the pork chops and sear for 4-5 minutes per side, or until golden brown and cooked through. Remove the pork chops from the skillet and set aside on a plate; cover loosely with foil to keep warm.
