Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large yellow onions
  • 1 tablespoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 4 slices smoked Gouda cheese
  • 1 teaspoon fresh thyme (optional)

Directions

Step 1

Prepare the pork chops by patting them dry with a paper towel. Season both sides with salt, black pepper, garlic powder, and smoked paprika.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot, sear the pork chops for 3-4 minutes per side, or until they are golden brown. Remove them from the skillet and set aside on a plate.

Step 3

In the same skillet, reduce the heat to medium and add the unsalted butter.

Step 4

Thinly slice the yellow onions and add them to the skillet with the melted butter. Stir occasionally and cook for 15-20 minutes until the onions are soft and caramelized.

Step 5

Add the brown sugar and balsamic vinegar to the onions. Stir and cook for an additional 2 minutes until the mixture is thickened and well combined.

Step 6

Return the pork chops to the skillet, nestling them into the caramelized onions. Reduce the heat to low, cover the skillet, and cook for 10 minutes or until the pork chops reach an internal temperature of 145°F (63°C).

Step 7

Place one slice of smoked Gouda cheese on each pork chop. Cover the skillet for 1-2 minutes, allowing the cheese to melt.

Step 8

Garnish with fresh thyme, if desired, and serve immediately with your favorite sides, such as mashed potatoes or roasted vegetables.
