Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 large yellow onions
  • 2 tablespoons unsalted butter
  • 0.25 cup bourbon
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 0.5 cup chicken stock
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Season both sides of the pork chops with salt, black pepper, and paprika. Let the chops rest at room temperature for 10 minutes.

Step 2

Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and swirl to coat the pan.

Step 3

Sear the pork chops in the hot skillet, cooking for 3-4 minutes per side until golden brown and a thermometer reads 145°F (63°C) at the thickest part. Remove the chops from the skillet and set aside on a plate tented with foil.

Step 4

Thinly slice the yellow onions. In the same skillet, add 2 tablespoons of unsalted butter and allow it to melt.

Step 5

Add the sliced onions to the skillet and stir to coat them evenly in the butter. Cook for 8-10 minutes over medium heat, stirring occasionally, until the onions are softened and golden.

Step 6

Carefully pour in the bourbon, allowing it to deglaze the pan. Stir, scraping any browned bits from the bottom of the skillet.

Step 7

Add the brown sugar, apple cider vinegar, chicken stock, and thyme leaves. Stir and let the mixture simmer for 5 minutes until it thickens into a glaze.

Step 8

Return the pork chops to the skillet, nestling them into the bourbon-onion mixture. Cook for an additional 2-3 minutes, spooning the glaze over the pork chops.

Step 9

Remove the skillet from heat and allow the dish to rest for 2 minutes before serving.

Step 10

Serve the pork chops hot with the bourbon-glazed onions draped on top. Pair with your favorite sides, such as mashed potatoes or roasted vegetables, for a complete meal.
