Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons shallots, finely diced
  • 2 cloves garlic, minced
  • 1 cup blackberries
  • 1 cup chicken stock
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Season both sides of the pork chops with salt and pepper. Let them rest at room temperature for about 10 minutes to allow the seasoning to penetrate the meat.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Once the oil is shimmering, add the pork chops and sear for 4-5 minutes on each side until golden brown and the internal temperature reaches 145°F (63°C). Remove the pork chops from the skillet and set aside to rest.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the diced shallots and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the blackberries to the skillet and cook for 2 minutes, gently mashing them with the back of a spoon to release their juices.

Step 5

Pour in the chicken stock and bring to a simmer. Let the sauce reduce for 5-7 minutes, stirring occasionally, until it thickens slightly.

Step 6

Stir in the Dijon mustard, honey, and fresh thyme. Cook for 1-2 minutes to combine the flavors. Taste and adjust seasoning with more salt or pepper if needed.

Step 7

Return the pork chops to the skillet, spoon the sauce over the top, and let them sit in the sauce for 2-3 minutes to warm through.

Step 8

Serve the pork chops with generous spoonfuls of the blackberry mustard sauce on top. Pair with mashed potatoes or roasted vegetables for a complete meal.
