Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 pieces apples (firm, such as Honeycrisp, sliced)
  • 1 large yellow onion (sliced)
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme
  • 4 pieces russet potatoes
  • 0.5 cup heavy cream
  • 1 cup sharp cheddar cheese (shredded)
  • 0.5 cup Parmesan cheese (grated)
  • 2 tablespoons scallions (chopped, optional garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the russet potatoes and pat them dry. Use a fork to poke a few holes in each potato. Place them on a baking sheet and bake in the oven for 40-45 minutes, or until soft when pierced with a knife.

Step 3

Meanwhile, pat the pork chops dry with a paper towel and season both sides with salt, black pepper, and garlic powder.

Step 4

In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the pork chops from the skillet and set aside on a plate, tenting them with aluminum foil.
