Ingredients

  • 4 pieces bone-in pork chops
  • 6 slices bacon
  • 2 pieces apple (such as Honeycrisp or Granny Smith), peeled, cored, and sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 teaspoon fresh thyme leaves
  • 1 cup chicken stock
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground cinnamon

Directions

Step 1

Season both sides of the pork chops with salt and black pepper. Set aside.

Step 2

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet, place on a paper towel-lined plate, and crumble once cooled. Leave the bacon grease in the skillet.

Step 3

Add 1 tablespoon of olive oil to the skillet with the bacon grease and heat over medium-high heat. Sear the pork chops for 3-4 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside on a plate.

Step 4

In the same skillet, lower the heat to medium and add the butter. Once melted, add the thinly sliced onion and cook for about 4-5 minutes until softened.

Step 5

Stir in the sliced apples, brown sugar, cinnamon, and thyme. Cook for about 5-6 minutes until the apples are tender but not mushy.

Step 6

Pour in the chicken stock and bring the mixture to a simmer. Return the pork chops to the skillet, nestling them into the apple and onion mixture. Spoon some of the mixture over the chops.

Step 7

Cover the skillet with a lid, reduce the heat to low, and let the pork chops cook for about 10-12 minutes, or until they reach an internal temperature of 145°F (63°C).

Step 8

Sprinkle the crumbled bacon over the top before serving. Serve the pork chops warm, with some of the apple and onion mixture spooned on top.
