Ingredients

  • 4 boneless pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup dried apricots
  • 0.5 cup golden raisins
  • 0.5 cup pecans
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.25 cup water
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut a pocket into the side of each pork chop, being careful not to cut all the way through. Set aside.

Step 3

Season the pork chops inside and out with salt and black pepper.

Step 4

In a small saucepan over medium heat, combine the dried apricots, golden raisins, pecans, honey, apple cider vinegar, ground cinnamon, ground ginger, and water. Stir well.

Step 5

Simmer the mixture for 8–10 minutes, or until the dried fruits have softened and the mixture has thickened. Remove from heat and let it cool slightly.

Step 6

Stuff each pork chop pocket with the chutney mixture, pressing gently to secure the filling. If needed, use toothpicks to hold the edges of the chops together.

Step 7

Heat the olive oil in a large, oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2–3 minutes on each side, until golden brown.

Step 8

Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

Step 9

Remove the chops from the oven and let them rest for 5 minutes before serving.

Step 10

Garnish with freshly chopped parsley, if desired, and serve warm.
