Ingredients

  • 4 pieces Pork chops (bone-in or boneless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1.5 cups Mushrooms (such as cremini or button), sliced
  • 1 piece Shallot, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.5 cup White wine or chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and garlic powder.

Step 2

In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear them for 3-4 minutes per side, until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until they are browned and tender.

Step 4

Add the chopped shallot and minced garlic to the skillet and cook for another 1-2 minutes, until fragrant.

Step 5

Deglaze the skillet by adding the white wine (or chicken broth), scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes to reduce slightly.

Step 6

Stir in the heavy cream and Dijon mustard, mixing well. Bring the sauce to a gentle simmer.

Step 7

Return the pork chops to the skillet, nestling them into the sauce. Reduce the heat to low, cover, and let them cook for another 10-15 minutes, or until the pork chops are cooked through (internal temperature of 145°F/63°C).

Step 8

Taste the sauce and adjust the seasoning with additional salt and pepper if necessary.

Step 9

Garnish with fresh parsley and serve hot. Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
