Ingredients

  • 4 pieces bone-in pork chops
  • 4 large russet potatoes
  • 2 medium yellow onions
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons cooking oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with a thin layer of cooking oil or butter.

Step 2

Season the pork chops on both sides with paprika, garlic powder, salt, and pepper. Set aside.

Step 3

Peel and thinly slice the potatoes into rounds about 1/4 inch thick. Peel the onions and slice them into thin rings. Set both aside.

Step 4

In a large skillet, heat 2 tablespoons of cooking oil over medium-high heat. Sear the pork chops on each side for about 2 minutes, or until golden brown. Remove the chops and set aside on a plate.

Step 5

In the same skillet, reduce the heat to medium. Add butter and let it melt. Stir in the flour and cook for 1-2 minutes, whisking constantly, to form a roux.

Step 6

Gradually add the milk and chicken broth to the roux, whisking to create a smooth sauce. Cook for 3-4 minutes until the sauce slightly thickens. Season with a pinch of salt and pepper.

Step 7

Layer half of the sliced potatoes in the bottom of the prepared casserole dish. Top with half of the sliced onions.

Step 8

Pour half of the sauce over the potato-onion layer. Repeat with the remaining potatoes, onions, and sauce, spreading it evenly.

Step 9

Place the seared pork chops on top of the potato-onion mixture and cover the dish tightly with aluminum foil.

Step 10

Bake in the preheated oven for 50 minutes. Remove the foil and, if using, sprinkle shredded cheddar cheese over the casserole.

Step 11

Return the dish to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the potatoes are fork-tender.

Step 12

Remove the casserole from the oven and let it rest for 5 minutes before serving. Enjoy!
