Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Dijon mustard
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the pork chops on both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil.

Step 3

Sear the pork chops in the skillet for 3-4 minutes on each side until golden brown. Remove the pork chops and set aside on a plate.

Step 4

Reduce the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the Dijon mustard, chicken broth, and lemon juice, scraping up any browned bits from the bottom of the pan.

Step 6

Add the capers to the sauce and stir well.

Return the pork chops to the skillet, ensuring they are coated with the sauce. Reduce the heat to low, cover, and simmer for 10 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

Step 8

Garnish the pork chops with freshly chopped parsley and spoon the sauce over them before serving.

Step 9

Serve hot with a side of vegetables or mashed potatoes for a complete meal.
