  • 4 pieces bone-in pork chops
  • 1 pound baby potatoes
  • 8 ounces green beans
  • 3 medium carrots
  • 3 tablespoons olive oil
  • 3 pieces garlic cloves
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the baby potatoes, and cut them in half if they are large. Peel and slice the carrots into 1/2-inch thick pieces. Trim the ends of the green beans.

Mince the garlic cloves and set them aside.

Step 4

In a small bowl, combine the paprika, dried thyme, onion powder, salt, and black pepper.

Pat the pork chops dry with paper towels and rub 1 tablespoon of olive oil onto both sides. Sprinkle half of the spice mixture evenly over the pork chops and set them aside.
