Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces baby bella mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon parsley, chopped (optional, for garnish)

Directions

Step 1

Season both sides of the pork chops with salt and black pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes per side, or until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the finely chopped onion and cook for 2-3 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic and cook for 30 seconds, or until fragrant.

Step 5

Stir in the sliced mushrooms and cook for 4-5 minutes, or until the mushrooms release their juices and begin to brown.

Step 6

Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Simmer for 3 minutes to reduce slightly.

Step 7

Stir in the heavy cream and Dijon mustard until well combined. Simmer the sauce for another 3 minutes, or until it thickens slightly.

Step 8

Return the pork chops to the skillet, nestling them into the sauce. Spoon some sauce over the chops and reduce the heat to low. Cover and simmer for 8-10 minutes, or until the pork chops are cooked through and reach an internal temperature of 145°F (63°C).

Step 9

Taste the sauce and adjust seasoning with additional salt or black pepper, if needed.

Step 10

Serve the pork chops hot, spooned with the mustard mushroom sauce. Garnish with chopped parsley, if desired.
