  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup white rice
  • 2.5 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the pork chops generously with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet or deep sauté pan over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the pork chops from the pan and set aside.

Step 3

Lower the heat to medium and add the butter to the same pan. Once melted, add the diced onion and cook for 3-4 minutes until softened and translucent. Stir in the garlic and cook for another 30 seconds, until fragrant.

Rinse the rice under cold water until the water runs clear. Add the rinsed rice to the pan and stir to coat it in the butter and aromatics. Toast the rice for 1-2 minutes, stirring frequently.

Pour the chicken broth into the pan and stir in the thyme, parsley, paprika, salt, and additional black pepper. Bring the mixture to a gentle boil.

Nestle the seared pork chops back into the pan on top of the rice mixture. Reduce the heat to low, cover the pan with a lid, and let it simmer for 25-30 minutes, or until the rice is tender and the pork chops are cooked through (internal temperature of 145°F / 63°C).
