Ingredients

  • 4 pieces bone-in pork chops
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 cup all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 sprig fresh thyme (optional, for garnish)

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, garlic powder, and onion powder. Set them aside.

Step 2

Spread the flour on a plate and lightly dredge each pork chop in the flour, shaking off any excess. Reserve 2 tablespoons of the leftover flour for the gravy.

Step 3

Heat a large skillet over medium-high heat. Add the butter and olive oil to the skillet and let it melt.

Step 4

Sear the pork chops in the skillet for 3-4 minutes per side, until they are golden brown. You may need to work in batches if your skillet is not large enough. Remove the seared pork chops from the skillet and set them aside on a plate.

Step 5

Reduce the heat to medium. Add the reserved 2 tablespoons of flour to the skillet and whisk it into the remaining fat, cooking for 1-2 minutes until lightly browned. This forms the base of the gravy.

Step 6

Slowly pour in the chicken broth, whisking constantly to prevent lumps from forming. Let the mixture simmer for 2-3 minutes until it begins to thicken.

Step 7

Stir in the milk and continue to cook, whisking frequently, for another 2-3 minutes until the gravy is smooth and reaches your desired consistency. Season to taste with additional salt and pepper, if necessary.

Step 8

Return the pork chops to the skillet, nestling them into the gravy. Cover the skillet with a lid and reduce the heat to low. Let the pork chops simmer in the gravy for 10-15 minutes, until they are cooked through and reach an internal temperature of 145°F (63°C).

Step 9

Garnish with fresh thyme, if desired, and serve the pork chops hot with the gravy spooned over the top. They pair well with mashed potatoes or rice.
