Ingredients

  • 2 pieces boneless pork chops
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium, thinly sliced apple
  • 1 teaspoon brown sugar
  • 0.25 teaspoon ground cinnamon
  • 2 pieces ciabatta rolls
  • 2 teaspoons Dijon mustard
  • 1 cup arugula or spinach

Directions

Step 1

Season both sides of the pork chops with salt and ground black pepper.

Step 2

Heat the olive oil in a skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes on each side, or until cooked through (internal temperature should reach 145°F). Remove and set aside to rest.

Step 3

In the same skillet, reduce heat to medium and add the butter. Once melted, add the thinly sliced apple, brown sugar, and cinnamon. Cook for 5-7 minutes, stirring occasionally, until the apples are tender and caramelized. Remove from heat.

Step 4

Slice the ciabatta rolls in half and lightly toast them in a toaster or oven if desired.

Step 5

Spread 1 teaspoon of Dijon mustard on the bottom half of each roll.

Step 6

Place a pork chop on the mustard-spread side of each roll, then top with the caramelized apples and a handful of arugula or spinach.

Step 7

Place the top half of the ciabatta roll on the sandwich and serve immediately. Enjoy!
