Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces apple (e.g., Granny Smith or Honeycrisp)
  • 1 medium-sized yellow onion
  • 2 sprigs fresh thyme
  • 0.5 cups chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey

Directions

Step 1

Season the pork chops on both sides with the salt and black pepper. Let them sit at room temperature for 10 minutes while you prepare the other ingredients.

Step 2

Peel, core, and slice the apples into 1/4-inch thick wedges. Thinly slice the onion into rings and set both aside.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the chops from the skillet and set them aside on a plate.

Step 4

In the same skillet, reduce the heat to medium and add the butter. Once melted, stir in the sliced apples and onions, cooking for 5-6 minutes until softened and slightly caramelized.

Step 5

Add the thyme sprigs to the skillet, followed by the chicken broth, apple cider vinegar, and honey. Stir to combine and bring the mixture to a simmer.

Step 6

Return the pork chops to the skillet, nestling them into the apple-onion mixture. Spoon some of the sauce over the chops.

Step 7

Cover the skillet and cook for 6-8 minutes over medium heat, or until the pork chops reach an internal temperature of 145°F (63°C).

Step 8

Remove the skillet from heat and let the pork chops rest for 5 minutes. Discard the thyme sprigs.

Step 9

Serve the pork chops warm, topped with the apples, onions, and a generous spoonful of the sauce. Enjoy!
