Ingredients

  • 4 pieces bone-in pork chops
  • 8 slices pineapple slices (canned or fresh)
  • 1 cup pineapple juice (reserved from canned pineapple or fresh)
  • 0.25 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons cooking oil (e.g., vegetable oil)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons green onions, sliced (optional, for garnish)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the pork chops on both sides with salt and black pepper. Set aside.

Step 2

In a small bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger to create the marinade.

Step 3

Place the pork chops in a shallow dish or resealable plastic bag and pour half of the marinade over them. Reserve the other half for later. Allow the pork chops to marinate for at least 30 minutes or up to 4 hours in the refrigerator.

Step 4

Heat the cooking oil in a large skillet over medium-high heat. Remove the pork chops from the marinade and pat them dry with paper towels. Discard the marinade used for the pork.

Step 5

Sear the pork chops in the hot skillet for 3-4 minutes per side, or until they are browned and cooked to an internal temperature of 145°F (63°C). Transfer them to a plate and cover to keep warm.

Step 6

In the same skillet, add the reserved marinade and bring it to a gentle boil. Allow it to simmer for 2 minutes to reduce slightly.

Step 7

In a small bowl, mix the cornstarch and water to make a slurry. Stir the slurry into the simmering sauce and cook for 1-2 minutes, or until the sauce thickens.

Step 8

Add the pineapple slices to the skillet with the sauce and cook for 1 minute, allowing them to warm through and soak up the glaze.

Step 9

Return the pork chops to the skillet and spoon the sauce over them. Allow them to cook together for another 2 minutes to combine the flavors.

Step 10

Serve the Pork Chops Aloha warm, topped with pineapple slices and a sprinkle of sliced green onions for garnish, if desired. Pair with steamed rice or a side salad for a complete meal.
