Ingredients

  • 4 pieces Bone-in pork chops
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 0.5 teaspoons Crushed red pepper flakes
  • 28 ounces Canned whole peeled tomatoes
  • 1 teaspoon Dried oregano
  • 2 tablespoons Capers, rinsed and drained
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh basil leaves, chopped (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Season both sides of the pork chops with salt and black pepper.

Step 3

Sear the pork chops in the skillet for 2-3 minutes per side, until golden brown. Remove the pork chops from the skillet and set them aside.

Step 4

In the same skillet, add the minced garlic and crushed red pepper flakes. Sauté for about 30 seconds, or until fragrant.

Step 5

Crush the canned whole peeled tomatoes with your hands or a fork, and add them to the skillet along with their juices.

Step 6

Stir in the dried oregano and capers, and bring the sauce to a simmer.

Step 7

Return the pork chops to the skillet, nestling them into the tomato sauce.

Step 8

Cover the skillet and reduce the heat to low. Simmer the pork chops in the sauce for 25-30 minutes, or until the chops are tender and cooked through.

Step 9

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 10

Sprinkle with fresh basil before serving, if desired.

Step 11

Serve the Pork Chops Alla Pizzaiola with crusty bread, pasta, or a side of your choice.
