Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 0.5 cup low-sodium chicken broth
  • 0.25 cup white wine or dry sherry
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon lemon juice

Directions

Step 1

Take the pork chops out of the refrigerator 30 minutes before starting to let them come to room temperature.

Step 2

Pat the pork chops dry with paper towels, then season both sides with salt, black pepper, garlic powder, and onion powder.

Step 3

In a large skillet, heat the olive oil over medium-high heat.

Step 4

Sear the pork chops for 3-4 minutes on each side or until golden brown. Remove the chops from the skillet and set aside on a plate.

Step 5

Lower the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.

Step 6

Pour in the chicken broth and white wine, using a wooden spoon to scrape any browned bits from the bottom of the skillet. Let the liquid reduce slightly, about 2-3 minutes.

Step 7

Stir in the heavy cream and fresh thyme leaves, and simmer for 2 minutes to thicken the sauce.

Step 8

Return the pork chops to the skillet, spoon the sauce over the top, and cover with a lid. Cook for an additional 8-10 minutes over low heat, or until the pork chops reach an internal temperature of 145°F (63°C).

Step 9

Remove the skillet from the heat and stir in the lemon juice for a bright, tangy finish.

Step 10

Serve the pork chops hot with the creamy sauce spooned over the top. Pair with mashed potatoes, steamed vegetables, or rice for a complete meal.
