Ingredients

  • 4 pieces Bone-in pork chops (1-inch thick)
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 sprigs Fresh thyme sprigs
  • 3 cloves Garlic cloves (smashed)
  • 2 tablespoons Chicken broth or water (optional)

Directions

Step 1

Pat the pork chops dry with paper towels to ensure a good sear.

Step 2

In a small bowl, mix together the kosher salt, ground black pepper, smoked paprika, and garlic powder. Rub this seasoning mix evenly over both sides of the pork chops.

Step 3

Heat a large skillet over medium-high heat and add the olive oil. Swirl to coat the bottom of the pan.

Step 4

Once the oil is shimmering, carefully place the pork chops in the skillet. Sear for 3-4 minutes on the first side, or until golden brown.

Step 5

Flip the pork chops and reduce the heat to medium. Add the butter, thyme sprigs, and smashed garlic cloves to the skillet.

Step 6

As the butter melts, tilt the skillet slightly and use a spoon to continuously baste the pork chops with the butter and aromatics. Cook for another 3-4 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C) on an instant-read thermometer.

Step 7

Optional: If the skillet becomes too dry before the pork chops are done, add 2 tablespoons of chicken broth or water to keep the meat moist and flavorful.

Step 8

Remove the pork chops from the skillet and let them rest on a cutting board or plate for 5 minutes to allow the juices to redistribute.

Step 9

Serve immediately, garnished with the cooked thyme and garlic for added aroma.
