Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large, thinly sliced yellow onion
  • 1.5 pounds baby potatoes
  • 12 ounces green beans
  • 1 cup low-sodium chicken broth
  • 3 minced garlic cloves
  • 1 teaspoon, chopped fresh rosemary
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, and paprika.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Step 3

Once hot, sear the pork chops for 3-4 minutes per side until golden brown. Remove the pork chops from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Reduce heat to medium.

Add the sliced onions and sauté for 2-3 minutes until softened.

Nestle the pork chops back into the skillet on top of the vegetables. Cover and cook for an additional 5-7 minutes, or until the pork chops are fully cooked and reach an internal temperature of 145°F (63°C).

Taste the sauce and adjust seasoning with additional salt or pepper if necessary.
