Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter
  • 4 large russet potatoes
  • 0.5 cup heavy cream
  • 3 cloves garlic cloves, minced
  • 12 ounces green beans, trimmed
  • 1 tablespoon lemon juice
  • 0.25 cup chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the pork chops on both sides with salt, black pepper, and garlic powder.

Step 3

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the pork chops for 3 minutes on each side until golden brown, then transfer the skillet to the oven and bake for 15 minutes or until the internal temperature reaches 145°F (63°C). Remove from oven and let the pork chops rest for 5 minutes.

Step 4

While the pork chops are baking, peel and chop the russet potatoes into even chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until tender when pierced with a fork.

Step 5

Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, 0.5 cup of heavy cream, and 2 minced garlic cloves. Mash until smooth. Season with salt and pepper to taste, then cover to keep warm.

Step 6

In a large skillet over medium heat, add 1 tablespoon of olive oil. Sauté the green beans with 1 minced garlic clove for 4-5 minutes, or until tender-crisp. Add the lemon juice and a splash of chicken broth to deglaze the pan. Cook for an additional 2 minutes.

Step 7

To serve, plate the pork chops alongside a generous scoop of garlic mashed potatoes and sautéed green beans. Enjoy your hearty pork chop dinner!
