Ingredients

  • 4 cups Cooked jasmine rice
  • 1 pound Pork, chicken, or shrimp (raw, diced or peeled if shrimp)
  • 3 tablespoons Vegetable oil
  • 3 large Eggs
  • 1 cup Frozen peas and carrots mix
  • 4 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 4 stalks Green onions (sliced)
  • 2 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Prepare all ingredients by dicing the meat (if using pork or chicken), peeling and deveining shrimp (if using shrimp), and slicing the green onions.

Step 2

Break up the cooked rice with your hands or a fork so it’s easier to stir-fry.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add your chosen protein and cook until fully cooked through, about 4-5 minutes for pork or chicken, or 2-3 minutes for shrimp. Remove from the skillet and set aside.

Step 4

In the same skillet, add an additional tablespoon of vegetable oil. Crack the eggs directly into the skillet and scramble until fully cooked. Remove and set aside with the protein.

Step 5

Add the last tablespoon of vegetable oil to the skillet. Toss in the garlic and cook until fragrant, about 30 seconds.

Step 6

Add the frozen peas and carrots mix to the skillet and cook for 1-2 minutes until heated through.

Increase the heat to high, then add the cooked rice to the skillet. Stir well to combine with the vegetables. Let the rice fry for 1-2 minutes without stirring to create some crispy bits.

Return the cooked protein and scrambled eggs to the skillet, mixing them evenly into the rice.

Add soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir everything together so the rice is evenly coated with sauce.
