Lay the pork cutlets flat on a clean surface. If they are not thin enough, use a meat mallet to pound them to about 1/4-inch thickness.
In a small mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, 1 tablespoon of olive oil, salt, and black pepper. Mix until it forms a cohesive stuffing mixture.
