Ingredients

  • 4 pieces Pork loin cutlets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 cup Vegetable oil
  • 2 tablespoons Unsalted butter
  • 2 medium Apples (e.g., Granny Smith or Honeycrisp)
  • 2 tablespoons Light brown sugar
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Lemon juice
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Place each pork loin cutlet between two sheets of plastic wrap or parchment paper, and gently pound with a meat mallet or rolling pin until about 1/4-inch thick.

Step 2

Season both sides of the pork cutlets with salt and black pepper.

Step 3

Set up a breading station: Place the flour in one shallow bowl, whisk the eggs in a second bowl, and place the breadcrumbs in a third bowl.

Step 4

Dredge each pork cutlet in the flour, shaking off the excess, then dip it in the beaten eggs, and finally coat it evenly in breadcrumbs. Place the breaded cutlets on a plate.

Step 5

Peel and core the apples, then slice them into thin wedges.

Step 6

In a skillet over medium heat, melt 2 tablespoons of butter. Add the apple slices, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes, stirring often, until the apples are soft and caramelized. Transfer the apples to a plate and set aside.

Step 7

In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded pork cutlets in batches, 2-3 minutes per side, until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Step 8

To serve, plate each pork schnitzel and top with a generous spoonful of the caramelized apples. Garnish with fresh parsley if desired.

Step 9

Serve immediately and enjoy!
