Slice the pork loin thinly into strips and place in a medium bowl. Toss with 2 tablespoons of soy sauce and cornstarch. Let it marinate for 10 minutes while preparing the vegetables.
Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil. Once hot, add the pork strips in a single layer. Sear for 2-3 minutes, turning once, until browned and cooked through. Remove the pork from the wok and set aside.
