Ingredients

  • 1 lb ground pork
  • 1 cup fresh spinach
  • 3 stalks green onions
  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 40 pieces wonton wrappers
  • 2 tbsp neutral cooking oil (e.g., vegetable oil)
  • 0.25 cup water
  • 1 tbsp cornstarch
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Finely chop the fresh spinach and green onions. Mince the garlic and grate the fresh ginger.

Step 2

In a large bowl, combine the ground pork, chopped spinach, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Step 3

Prepare your work surface by dusting a small area with cornstarch to prevent sticking. Lay out a few wonton wrappers at a time.

Step 4

Place about 1 teaspoon of the pork filling in the center of each wonton wrapper.

Step 5

Lightly dampen the edges of the wrapper with water using your finger or a small brush. Fold the wrapper in half to form a crescent shape, pressing the edges firmly to seal. Optionally, crimp the edges for a decorative effect.

Step 6

Heat 1 tablespoon of neutral cooking oil in a large non-stick skillet over medium heat.

Step 7

Place the potstickers in the skillet in a single layer, ensuring they are not touching. Cook for 2-3 minutes, or until the bottoms are golden brown.

Step 8

Carefully add 1/4 cup of water to the skillet and immediately cover it with a lid. Reduce the heat to low and let the potstickers steam for 5-7 minutes, or until the filling is cooked through and the wrappers are tender.

Step 9

Remove the lid and increase the heat to medium. Continue cooking for another 1-2 minutes to re-crisp the bottoms of the potstickers.

Step 10

Transfer the cooked potstickers to a serving plate and repeat the process with any remaining potstickers.

Step 11

Serve warm with your favorite dipping sauce, such as soy sauce mixed with rice vinegar and a touch of chili oil.
