Ingredients

  • 454 grams Boneless pork loin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 2 tablespoons Olive oil
  • 300 grams Cooked white or brown rice
  • 1 medium Cucumber, diced
  • 200 grams Cherry tomatoes, halved
  • 1 medium Red bell pepper, diced
  • 2 stalks Green onions, thinly sliced
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh lime juice
  • 1.5 tablespoons Soy sauce
  • 1 teaspoon Honey

Directions

Step 1

Preheat a skillet or grill pan over medium-high heat.

Step 2

Rub the pork loin with salt, black pepper, and cumin on all sides.

Step 3

Heat 1 tablespoon of olive oil in the skillet and cook the pork for 4-5 minutes per side, or until the internal temperature reaches 63°C (145°F). Remove from the skillet and let rest for 5 minutes.
