  • 1.5 pounds pork shoulder or pork loin
  • 4 medium russet potatoes
  • 1 cup orange juice
  • 1 cup cola
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, diced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter
  • 2 tablespoons chopped fresh parsley (optional for garnish)

Directions

Step 1

Cut the pork into 1-inch cubes and season with salt, black pepper, paprika, and thyme. Set aside.

Step 2

Peel and chop the potatoes into 1-inch chunks. Place them in a bowl of water to prevent browning while preparing the other ingredients.

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the pork cubes and sear them in batches until browned on all sides. Remove the pork and set aside.
