Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
Season the cubed pork shoulder with salt and black pepper. Sear the pork in batches, browning all sides evenly. Remove the pork and set aside on a plate.
Reduce heat to medium and add the chopped onion to the pot. Sauté until soft and translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
