  • 1 lb boneless pork shoulder
  • 2 large russet potatoes

  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley
  • 4 large eggs

Directions

Step 1

Dice the pork shoulder into bite-sized pieces, about 1/2 inch each. Peel and dice the potatoes into 1/2 inch cubes. Finely chop the onion, bell pepper, and garlic.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced pork and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.

Step 3

Add 2 tablespoons of olive oil to the same skillet. Add the diced potatoes and cook over medium heat, stirring occasionally, until they are golden and crisp, about 10-12 minutes.
