Ingredients

  • 500 grams pork loin
  • 400 grams penne pasta
  • 3 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 1 large, diced red bell pepper
  • 1 medium, diced zucchini
  • 400 grams crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams, grated parmesan cheese
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, trim excess fat from the pork loin and cut it into bite-sized cubes.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the pork cubes and cook for 5-7 minutes, until browned on all sides. Remove the pork from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion for 3-4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
