  • 2 pounds Pork shoulder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 Yellow onion, diced
  • 4 Garlic cloves, minced
  • 4 cups Chicken broth
  • 2 Russet potatoes, peeled and cubed
  • 1.5 cups Roasted green chiles, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 14-ounce can Canned diced tomatoes
  • 0.25 cup Fresh cilantro, chopped
  • 1 tablespoon Lime juice

Directions

Step 1

Cut the pork shoulder into bite-sized cubes and season with salt and black pepper.

Step 2

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the pork in batches, searing until browned on all sides. Remove the pork and set aside.

Step 3

In the same pot, reduce the heat to medium. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4
