Ingredients

  • 500 g Pork sausage meat
  • 100 g Dried cranberries
  • 50 g Panko breadcrumbs
  • 1 tbsp Fresh thyme leaves
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Ground black pepper
  • 1 tsp Salt
  • 2 sheets Puff pastry sheet
  • 1 large Egg, beaten
  • 2 tbsp Plain flour, for dusting

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a large baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the pork sausage meat, dried cranberries, panko breadcrumbs, fresh thyme leaves, chopped parsley, ground black pepper, and salt. Mix until fully incorporated.

Step 3

Lightly dust your work surface with flour. Roll out the puff pastry sheets if needed to ensure they are smooth and even.

Cut each puff pastry sheet in half lengthwise to create four long rectangles.

Step 5

Divide the sausage mixture into four equal portions. Shape each portion into a long, even sausage and lay it along the center of each pastry strip.
