Ingredients

  • 2 pounds pork shoulder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 yellow onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 medium head green cabbage, chopped
  • 1 can diced tomatoes (14 oz can)
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 3 medium potatoes, peeled and cubed
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

1. Cut the pork shoulder into bite-sized chunks. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

2. Heat 2 tablespoons of vegetable oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Step 3

3. Sear the pork pieces in batches, cooking for 2-3 minutes on each side until browned. Remove the pork and set aside.

Step 4

4. In the same pot, add the diced onion, sliced carrots, and sliced celery. Cook for 5-6 minutes, stirring occasionally, until softened.

Step 5

5. Add the minced garlic and cook for another 1 minute until fragrant.

Step 6

6. Return the browned pork to the pot. Pour in 6 cups of chicken broth, ensuring the pork is fully submerged.

Step 7

7. Add the chopped cabbage, canned diced tomatoes (including juice), bay leaf, paprika, and dried thyme. Stir to combine.

Step 8

8. Bring the stew to a simmer. Reduce the heat to low, cover, and let it cook for 1 hour.

Step 9

9. Add the cubed potatoes to the pot and continue cooking for an additional 30-40 minutes, or until the pork is tender and the potatoes are cooked through.

Step 10

10. Taste the stew and adjust seasoning with additional salt and pepper if needed.

Step 11

11. Remove the bay leaf. Serve the stew hot, garnished with chopped parsley if desired.
