  • 1 lb pork shoulder (boneless, diced)

  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar

  • 1 tsp ground cumin
  • 0.5 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup chicken stock

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Step 3

Season the diced pork shoulder with a pinch of salt and pepper, then sear in the skillet until browned on all sides, about 5-6 minutes. Remove the pork and set aside.

Step 4

In the same skillet, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Stir in the tomato paste, smoked paprika, ground cumin, dried thyme, and brown sugar. Cook for 1-2 minutes to develop the flavors.
