  • 500 grams pork shoulder
  • 150 grams dried apricots
  • 1 large onion
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 400 grams tomatoes
  • 400 ml coconut milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 stick cinnamon stick
  • 250 ml chicken or vegetable stock
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh coriander
  • 1 tablespoon lemon juice

Directions

Step 1

Cut the pork shoulder into bite-sized cubes and set aside.

Step 2

Finely dice the onion and mince the garlic. Grate the ginger.

Step 3

Heat the vegetable oil in a large pot or deep skillet over medium heat.

Step 4

Add the onion and cook for 3-4 minutes until soft and translucent.

Step 5

Stir in the garlic, ginger, curry powder, turmeric powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant.
