Ingredients

  • 500 grams Boneless pork shoulder (cut into 1-inch cubes)
  • 2 tablespoons Olive oil
  • 1 large Onion (finely chopped)
  • 1 medium Carrot (diced)
  • 2 cloves Garlic (minced)
  • 2 medium Apples (peeled, cored, and sliced thinly)
  • 300 milliliters Chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Thyme leaves (fresh)
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 500 grams Ready-made shortcrust pastry (or homemade)
  • 1 large Egg (beaten, for glazing)

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the pork cubes with salt and pepper, then brown them in batches. Transfer to a plate and set aside.

In the same skillet, add the remaining olive oil. Sauté the onion, carrot, and garlic until softened, about 5 minutes.

Stir in the flour and cook for 1 minute, then gradually add the chicken stock, stirring continuously to avoid lumps.
