Ingredients

  • 2 lbs pork belly
  • 0.5 cup soy sauce
  • 0.25 cup white vinegar
  • 1 tbsp whole black peppercorns
  • 3 pieces bay leaves
  • 6 pieces garlic cloves
  • 1 medium onion
  • 1 cup water
  • 2 tbsp cooking oil
  • 1 tsp sugar
  • 0.5 tsp salt

Directions

Step 1

Cut the pork belly into 1.5-inch cubes and set aside.

Step 2

Peel and crush the garlic cloves and slice the onion thinly.

Step 3

In a large bowl, combine the soy sauce, vinegar, crushed garlic, and bay leaves.

Step 4

Add the pork belly cubes to the marinade, ensuring each piece is well coated.

Step 5

Let the pork marinate for at least 30 minutes to an hour in the refrigerator for better flavor.

Step 6

Heat cooking oil in a large pot over medium-high heat.

Step 7

Add the sliced onion and sauté until they become translucent.

Step 8

Add the marinated pork belly cubes, reserving the marinade, and sear until they are browned on all sides.

Step 9

Pour in the reserved marinade, whole peppercorns, and a cup of water into the pot.

Step 10

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Step 11

Let it simmer for about 45 minutes to an hour, or until the pork is tender. Stir occasionally.

Step 12

Once the pork is tender, remove the lid and add sugar. Stir to dissolve.

Step 13

Increase the heat to medium and allow the sauce to reduce to your desired thickness.

Step 14

Taste and add salt if necessary.

Step 15

Once the sauce has thickened, remove from heat and serve hot with steamed rice.
